200g good-quality dark chocolate, finely chopped

120ml double cream

2 tbsp unsalted butter, softened

1 tbsp golden syrup

1 tsp vanilla extract

1/4 tsp Isle of Skye Smoked Sea Salt Crystals, plus extra for coating
Directions
Place the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and let it stand for 2 minutes. Gently stir until the chocolate is completely melted and the mixture is smooth.
Add the softened butter, golden syrup, vanilla extract, and 1/4 tsp Isle of Skye Smoked Sea Salt Crystals to the chocolate mixture. Stir until well combined and the butter is fully incorporated.
Cover the bowl with cling film and refrigerate for at least 1 hour, or until the mixture is firm enough to scoop.
Using a melon baller or small spoon, scoop out rounds of the chilled chocolate mixture and roll them into balls between your palms. Place the truffles on a parchment-lined baking tray as you go.
Once all the truffles are shaped, sprinkle them generously with Isle of Skye Smoked Sea Salt Crystals, rolling them gently to coat the outside.
Refrigerate the truffles for at least 30 minutes before serving to allow them to firm up further.
