These moreish salted caramel bites boast a lusciously chewy caramel interior with an irresistible crunch from Isle of Skye sea salt crystals.
Ingredients

1 cup (200g) white granulated sugar

1/4 cup (60ml) water

1/2 cup (120ml) heavy cream, at room temperature

1/4 cup (60g) unsalted butter, cut into cubes

1 tsp vanilla extract

1/2 tsp Isle of Skye Sea Salt Crystals, plus more for sprinkling
Directions
Line an 8x8 inch baking pan with parchment paper or foil, leaving some overhanging for easy removal later.
In a heavy-bottomed saucepan, combine the sugar and water. Cook over medium-high heat without stirring until the sugar dissolves and turns a deep amber colour, about 8-10 minutes. Swirl the pan gently if needed to ensure even cooking.
Remove from heat and carefully add the cream (it will bubble vigorously). Stir quickly with a wooden spoon until combined.
Return to medium heat and add the butter cubes. Stir continuously until the butter is melted and the mixture is smooth, about 2 minutes.
Remove from heat and stir in the vanilla extract and 1/2 tsp Isle of Skye Sea Salt until fully combined.
Quickly pour the hot caramel into the prepared baking pan and spread into an even layer. Allow to cool at room temperature for 30 minutes.
Sprinkle the top of the caramel slab generously with extra Isle of Skye sea salt.
Refrigerate for 1-2 hours until completely set and firm.
Once chilled, remove caramel from the pan using the parchment overhang. Cut or break into bite-sized pieces using a sharp knife or pizza cutter.
