These moreish salted caramel bites boast a lusciously chewy caramel interior with an irresistible crunch from Isle of Skye sea salt crystals.

Ingredients
- 1 cup (200g) white granulated sugar
- 1/4 cup (60ml) water
- 1/2 cup (120ml) heavy cream, at room temperature
- 1/4 cup (60g) unsalted butter, cut into cubes
- 1 tsp vanilla extract
- 1/2 tsp Isle of skye smoked salt, plus more for sprinkling
Directions
- Line an 8x8 inch baking pan with parchment paper or foil, leaving some overhanging for easy removal later.
- In a heavy-bottomed saucepan, combine the sugar and water. Cook over medium-high heat without stirring until the sugar dissolves and turns a deep amber colour, about 8-10 minutes. Swirl the pan gently if needed to ensure even cooking.
- Remove from heat and carefully add the cream (it will bubble vigorously). Stir quickly with a wooden spoon until combined.
- Return to medium heat and add the butter cubes. Stir continuously until the butter is melted and the mixture is smooth, about 2 minutes.
- Remove from heat and stir in the vanilla extract and 1/2 tsp Isle of Skye Sea Salt until fully combined.
- Quickly pour the hot caramel into the prepared baking pan and spread into an even layer. Allow to cool at room temperature for 30 minutes.
- Sprinkle the top of the caramel slab generously with extra Isle of Skye sea salt.
- Refrigerate for 1-2 hours until completely set and firm.
- Once chilled, remove caramel from the pan using the parchment overhang. Cut or break into bite-sized pieces using a sharp knife or pizza cutter.
