Baked to pillowy perfection, this rustic focaccia bread boasts a signature dimpled texture infused with aromatic rosemary and the bright crunch of hand-harvested Isle of Skye sea salt crystals for incredible depth of flavor.
Ingredients

3 1/4 cups (390g) all-purpose flour

1 teaspoon sugar

1 teaspoon Isle of Skye Pure Sea Salt Crystals, plus more for topping

1 teaspoon instant yeast

1 1/4 cups (295ml) warm water

1/4 cup (60ml) olive oil, plus more for drizzling

2 tablespoons finely chopped fresh rosemary

Isle of Skye Pure Sea Salt for finishing (optional)
Directions
In a large bowl, whisk together the flour, sugar, 1 teaspoon Isle of Skye Pure Sea Salt Crystals, and instant yeast. Create a well in the middle and pour in the warm water and 1/4 cup olive oil.
Using a wooden spoon, gradually mix the dry ingredients into the wet ingredients until a dough forms.
Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth, elastic, and not too sticky, adding more flour as needed.
Shape dough into a ball and place in a large oiled bowl, turning to coat all over. Cover with plastic wrap or a towel and let rise for 1 hour at room temperature.
After 1 hour, punch down the dough to release air bubbles. On a lightly floured surface, use your hands to stretch and shape the dough into an oval about 1/2 inch thick. Transfer to a parchment-lined baking tray.
Use your fingertips to dimple and make indents all over the surface of the dough. Drizzle with olive oil and let rest for 1 hour.
Preheat the oven to 425°F (220°C).
After resting, drizzle more olive oil over the focaccia and sprinkle evenly with the fresh rosemary and a generous pinch of sea salt crystals.
Bake for 20-25 minutes until puffed and golden brown.
Remove from the oven, let it cool slightly, then drizzle with more olive oil if desired.

I made this rosemary and sea salt focaccia last weekend and oh my god, it was insanely good! The smell alone when it was baking was enough to make my mouth water… Loved the little pockets of flavour from the rosemary and the crunch from the salt – perfect for mopping up good olive oil. :P Will 100% make again, such an easy but impressive bread!
