First harvest of the season

Today was the first harvest of the season. We are delighted that all three tunnels produced such a bumper harvest. Great quality salt ready to be dried and sorted.

The tunnels will then be refilled tomorrow and the water left to evaporate using just the sun and the wind. The next crop will probably be in three to four weeks time.
